I have made no comment about the BBQ place on Burdeck St ...... other people are free to go there but I don't have any particular desire to go there. |

Sticking to the actual topic ---- great BBQ needs great sides ----- this opens up a number of routes of discussion.
Cole Slaw ....... a great side dish ... but so many different ways to make it. There are 2 or 3 local eateries that make excellent cole slaw (i'll keep those names to myself)
Grits ...... one of my favorite foods ... my first memory of eating grits was at a small eatery on the Eastern Shore of Virginia over 40 years ago ---- every time I traveled down US Route 13 since then I have stopped at that place ... the older lady who did all the cooking has long since gone to her eternal reward ... but every spoonful of grits brings back memories of our long-past annual family trips.
I was pleasantly surprised to stumble upon a place in west-central Tennessee that served an exceptionally different version of grits. |

Macaroni and Cheese seems to be a popular side to great BBQ. There are many ways to fix this side --- my favorite is baked macaroni and cheese ---- and you must have AT LEAST 3 different types of cheese. The secret is to cook the macaroni separate from the cheese sauce ---- then combine the two and bake --- and you must let the end product "set a spell" after removing it from the oven.
There are of course endless ways to embellish macaroni and cheese --- and endless combinations of cheeses to experiment with --- so try them all and enjoy. |
