9.4 million Swedish people and millions more people around the world who aren't provincial boors and happen to enjoy experiencing cuisines and cultures other than their own are interested in Swedish food.  By the way - the cuisine of Northern Europe (of which Sweden and Scandinavia is a part of) had influences on other cuisines including Italian cuisine.   The best example of this would be the Baccala (salt cod) -- this fish was native to the northern seas and introduced to the Mediterranean people by the Vandals who sacked Rome 1600 years ago.
