Centuries ago, the chefs/cooks of North Africa and the Middle East created most of the basic recipes and cooking techniques that we use.   Their cuisine is the "mother" of all western cuisines.  And thankfully, it remains pretty true to its origins ---even today.

Egyptian pizza is the best --- thin and crispy crust ... and more use of fresh vegetables ... slices of tomato instead of canned tomato sauce ---  very healthy for everybody.

A Middle Eastern/North African/Mediterranean diet is extremely healthy.   I have found that 1,200 calories a day is quite doable -- I can enjoy pretty much any food that I like IN MODERATION -- portion size is very important.   Exercise is for important, too.  

Just say NO to the processed foods -- eat real food -- preferably locally* grown or produced.  


* purchased DIRECTLY from the grower/producer who is located within 150 miles of your place of residence

BTW -- found the most awesome poultry farm in CT -- that sells free range turkeys and chickens  -- as an added bonus it is just around the corner from a shop that hand-makes HIGH QUALITY  chocolates and other goodies.

I actually believe that the various seafood dishes that the Swedish people have perfect can be healthy -- IF prepared correctly. I have certain recipes that my family often enjoys when I have time to make them. MY Gravlax recipe is to die for and my Swedish Meatballs -- although not as heart healthy as fish -- make a rich and delectable treat the one or two times per year I enjoy them. People have told me that my Swedish Meatballs are the very best they have tried and I am extremely reticent to share the recipe with anyone.

The secret to Swedish meatballs -- is having just the right blend of ground veal, ground pork and ground STEAK  (not ground round or hamburger meat).   I have even substituted ground pork sausage (either hot or sweet or a combination of hot and sweet) for ground pork -- or you can make a batch with ground hot sausage and another batch with ground sweet sausage .. and then mix the two batches.

Heavy cream is a must for the gravy/sauce -- and I will keep my seasoning blend a secret.
